Banana Dessert Pizza

The other day I had some friends over for a barbecue. I wanted to make a dessert but had no idea what to make. Then I decided to make a dessert pizza in the style of bananas foster. While I did not flambé it, I still gave it the characteristic flavor.

As you can see I covered it in icing too. Like bacon, everything is better with icing.

Preparing the Dough

The first step is to make the pizza dough and let it rise till it doubles. Here is a simple and easy pizza dough recipe. If you are running short on time, almost all grocery stores have pre-made pizza dough in the deli section. Or, you can always stop by a local pizzeria and purchase the pre-made dough.

Take your dough and stretch and toss it until you get a round thin dough.

Adding the Bananas and Sugar Mixture

Next cut up three bananas into 1/4 inch thick rounds and spread them over the dough.

In a separate bowl, combine the sugar, brown sugar and butter.

Using a fork or pastry blender combine the ingredients until the butter is chopped up and pea sized.

Next add the cinnamon and blend again.

Next sprinkle over the top of the bananas. I know it won’t look like much but it will melt and cover the bananas perfectly.

Baking

Place in a preheated 425 degree oven for 15-20 minutes. When the sugar is melted and the crust is golden brown it is perfectly cooked.

Finishing with Icing

Remove from the oven and let cool for 5 minutes. While the pizza is cooling mix up the icing by combining the powdered sugar, milk and vanilla. The amount of milk will vary but make sure your icing is rather thick as it will melt under the heat of the pizza. Drizzle the icing over the pizza and serve.

This is a great dessert pizza. Besides bananas, it would work great with apples, peaches, pears and other fruits.

Ingredients
  

For the Pizza
  • 1 batch pizza dough see Basic Pizza Dough recipe or use pre-made
  • 3 bananas sliced into 1/4 inch rounds
Sugar and Cinnamon Topping
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons cinnamon
Icing
  • 1/2 cup powdered sugar
  • 1-2 teaspoons milk
  • 1/4 teaspoon vanilla extract

Method
 

  1. Prepare pizza dough according to recipe and let it rise until doubled. Alternatively, use store-bought pre-made pizza dough.
  2. Stretch and toss the dough until you have a round, thin pizza crust.
  3. Place dough on a pizza pan or baking sheet.
  4. Slice three bananas into 1/4 inch thick rounds and spread evenly over the dough.
  5. In a separate bowl, combine the brown sugar, granulated sugar, and butter.
  6. Using a fork or pastry blender, blend ingredients until the butter is chopped into pea-sized pieces.
  7. Add the cinnamon to the butter-sugar mixture and blend again.
  8. Sprinkle the cinnamon-sugar mixture evenly over the banana layer.
  9. Preheat oven to 425°F. Bake for 15-20 minutes until the sugar is melted and the crust is golden brown.
  10. Remove from oven and let cool for 5 minutes.
  11. While pizza is cooling, mix the icing by combining powdered sugar, milk, and vanilla. Make the icing thick (it will melt on the hot pizza).
  12. Drizzle the icing over the warm pizza.
  13. Slice and serve warm. This dessert pizza also works great with apples, peaches, pears, or other fruits.

Notes

This dessert is inspired by bananas foster but without the flaming. The cinnamon-sugar mixture will melt over the bananas creating a caramelized topping. Make sure the icing is thick enough that it won’t slide off the warm pizza. You can substitute the pizza dough by using store-bought pre-made pizza dough from the grocery store deli section or a local pizzeria. This recipe serves 8 as individual slices but can easily be adjusted to serve smaller or larger groups.

  1. Yum, i made this for dessert tonight. Instead of the icing topping, we had ice-cream. Delicious!

  2. I think I'd go with brown sugar. Not sure how I feel about banana with bread. But I'd still try your dessert pizza, and it's healthy too.

    1. Stephanie, it is best the day of. I have not tried it the day before, but I am pretty sure that it would be mushy.
