Grandma Donna’s Chicken Chili

My Grandma Donna would always make me Chicken Chili when I would visit her. It was extremely tasty and included only a handful of ingredients. Since it has been getting colder around here I decided to make some.

Top with a little cheese and this chili is amazing!!Dice up the chicken into cubes. Saute in 2 tbs olive oil in a large pan. When the chicken is fully cooked add the 3 cans of great northern beans. Make sure to not drain the beans. Add the beans and the liquid from the can.

Add the jar of salsa and 2 tsp of cumin. Bring to a boil and then reduce temperature to low and let simmer for 20 minutes.
I used a hot and spicy salsa to add a little heat, but you can use mild or medium.

Remove the pan from the heat and stir in the cheese.Serve the chili in a large bowl and top with cheese, a dollop of sour cream, tortilla chips, saltines or even freshly baked corn bread.

Grandma Donna’s Chicken Chili

Simple white chicken chili with great northern beans, salsa, and Monterrey Jack cheese. Perfect comfort food.

Ingredients
  

  • 2 pounds chicken breasts
  • 3 14-15 oz cans great northern beans
  • 1 16 oz jar salsa
  • 2 tsp cumin
  • 2 cups Monterrey Jack cheese
  • 2 tbs olive oil

Method
 

  1. Dice up the chicken into cubes.

  7. Serve in large bowls and top with cheese, sour cream, tortilla chips, saltines, or cornbread.

Notes

Pick your preferred salsa spiciness (mild, medium, or hot). You can top with cheese, sour cream, tortilla chips, saltines, or cornbread.

  1. Rex, that is so simple, I love it! This is one that would be easy for having my youngest son help me make.

    1. It is really easy to make. It is almost so simple that you would think that it wouldn't have much flavor. It is super tasty. You could add all of the ingredients for salsa separately, but this is a quick and tasty meal. I actually had leftovers of it today with Fritos in it. Awesome!!
