Sorry that I missed my post yesterday. I drove from Michigan to DC and it only took 12 hours. I saw multiple car pile-ups and a ton of bad drivers. It was a pretty good Sunday. Unfortunately I was unable to post anything for yesterday. However, today I have a great pie that my Mom and I made for my Cousin Thomas. It was his birthday over Thanksgiving so we decided to make him his favorite pie. Lemon Meringue. I have never made a lemon meringue pie so this was new to me. We decided to use a recipe that we found in the Lady and Sons cookbook. It made a pretty tasty pie.

I am a huge fan of potato skins. The other day I made bbq chicken potato skins. While making them I realized that potato skins are the perfect vessel for Thanksgiving leftovers. Fill the skin with your leftovers and your are there. I must say that these are some of the most delicious potato skins that I have ever had.

When I was a bartender I made T-shirts that said “Vodka Cranberry not Cranberry Vodka”. Everyone always ordered a Cranberry Vodka and then they gave me blank stares when I asked if they wanted a shot or what they wanted the cranberry vodka mixed with. Yep, they make cranberry vodka. We stocked two kinds of it. So here is a tip, order the spirit then order the mixer. I love cranberries and I also love vodka. So I did a little twist on the vodka cranberry and added a little lime juice and some sparkling water. Everything is a little better with some fizz.

The Vodka Cranberry Spritzer
Garnish with a lime and you are ready to go. Not the most manly drink, so I would suggest drinking it at home away from other people. Haha.

I always seem to bbq an extra chicken breast every time that I grill. I have no idea why there is an extra one, but there is always an extra. So I decided to come up with a great way to use the leftovers. On a side note, this use of bbq chicken leftovers is so good, I actually grill chicken to make it. Yep, it is chicken smothered in bbq sauce and layered with bacon and cheese. Oh, I forgot the best part. It is all in a potato bowl. How awesome does that sound?

BBQ Chicken Potato Skins
Top with a dollop of sour cream and some freshly cut green onions.

The Cocktail Primer
This weekend my friends came over and helped me build a home bar in my basement. It is pretty sweet. I will post pictures once it is finished. However, this was the perfect time to Review the Book, “The Cocktail Primer” by Eben Klemm. This is a great book on the basic cocktail. It goes over the makeup and level of complexity of each drink and further links the drinks together by drink family. Along with drink recipes, Klemm discloses how to set up your home bar. Everything from what spirits are necessary, to ingredients to have on hand all the way to the equipment that you will need.
