I am a huge fan of pizza. We try to make a few pies every week. So when I had the opportunity to try out the Pizzeria Pronto I jumped on it. I have been looking for a relatively affordable, pizza oven that would give me the perfect pizza with the perfect crust. The key to a perfect pizza oven is one that cooks the top and the bottom simultaneously. You want a nice crispy crust and with an even heat distribution. That way you don’t have to constantly be playing with the pizza.
Last year I appeared on the TV show American Grilled. On that show I competed against Big Jim Stancil of Bareknuckles BBQ. We kept in touch after the show and started to chat about all things bbq and grilling. During one of those chats, he asked if I would like to go to the Jack Daniels BBQ Championship and help him out. I could not say no. Come on, it was the Jack! While there I helped Big Jim do a little grilling for the teams up on the hill. The dish that Big Jim made, was an elk burger topped with a bacon onion jam. Ever since that day, I have been dreaming of that bacon onion jam. It was slightly sweet, slightly salty and all around bacon-y. It was delicious! So this is my take on bacon onion jam. Thanks for the idea Big Jim.
Dana and I are always on the lookout for easy and delicious weeknight meals. One protein that we usually never touch is fish. Mainly because I have had my fair share of bad salmon and other seafood. Recently, Dana’s mother made an oven-baked salmon that was super tasty. I had to have her recipe because it was absolutely delicious. Luckily, she was kind enough to give it to me and now you will benefit from this tasty recipe also. It is simple and quite scrumptious. The lemon rich marinade helps remove any fishy taste from the salmon. This is definitely a must try, especially if salmon is not your favorite dish but you are open to trying it!
A couple of years ago I got a rice cooker for Christmas. It was one of the most useful gifts I have ever received. We use at least once a week. However, with this new recipe we may be using it even more. I have been looking for an all-in-one side dish recipe, that I could just dump into the rice cooker. I was unable to find a recipe that worked for my needs. So I decided to make my own super easy recipe. Just add the ingredients into the rice cooker and start it up. It does not get any easier than that. This herb rice may be the best rice that I have ever made.
