I love the ease and convenience of a boneless turkey breast. However, I find that they can be quite dry sometimes. So, I decided to wrap one in bacon to see how it would turn out. The results were fantastic. This was definitely one of the best turkeys that I have ever eaten. It was moist, flavorful and best of all, easy to make! One of my favorite methods of cooking a turkey is on the smoker. I find that the smoke adds some nice little notes that complement the turkey. Traditionally, I use just salt and pepper. I love to smoke a turkey for the holidays. I have discovered that the only way to smoke an amazing turkey is to brine the turkey (and to tell you the truth, I even brine my oven-baked turkeys now). Without brining, the turkey can be dry and tough. However, if you use a standard brine, the turkey is guaranteed to be juicy and tender. My father-in-law is a huge fan of fried shrimp. The last time he came to visit we decided to dust off the deep fryer and make some fried shrimp. We started with some fresh shrimp, dredged them in egg wash and coated them with bbq rub seasoned bread crumbs. The results were fantastic! The tastiest shrimp that I have ever had!
The 1st Annual Smithfield BBQ Classic was one of the best BBQ contests that I have ever been to! The location, the guinea pig style competition and the company of Smithfield were all great. The town of Smithfield is charming and the Smithfield staff were hospitable and amazing! Arlie Bragg and Big Poppa Smokers put on a great competition. I mentioned before that this competition was a guinea pig competition. This means that all of the teams received their meat from the organizer (Amazing Smithfield Prime pork and a Snake River Farms Wagyu Brisket). Yep, everyone started with the same meat. I love this concept. It also included a Kids Que contest (Liam competed) and a delicious pot luck dinner the night before the competition.
