Bacon Wrapped Turkey Breast

I love the ease and convenience of a boneless turkey breast. However, I find that they can be quite dry sometimes. So, I decided to wrap one in bacon to see how it would turn out.  The results were fantastic.  This was definitely one of the best turkeys that I have ever eaten.  It was moist, flavorful and best of all, easy to make!  It was so simple that it should almost be illegal. If you are looking for a delicious and easy way to serve Turkey on Thanksgiving or any holiday for that matter, then this is your recipe.

I love to smoke a turkey for the holidays.  I have discovered that the only way to smoke an amazing turkey is to brine the turkey (and to tell you the truth, I even brine my oven-baked turkeys now).  Without brining, the turkey can be dry and tough. However, if you use a standard brine, the turkey is guaranteed to be juicy and tender.  This year, I decided to step up my brining process by using a super flavorful broth. Twice Baked Potatoes

When I was growing up, my Grandma Donna would always make twice baked potatoes for me.  They were my favorite.  So, I decided that I had better find her recipe and make some for my kids.  My version has a little twist, however.  It includes your favorite magical meat….BACON!!!!  This recipe is simple and super delicious!  Though it takes a little longer to make than a simple baked or mashed potato, it is totally worth it your time and effort.  This may even be a great recipe to try for your Thanksgiving dinner!!!

Shrimp Fried Rice is one of our favorite dishes when we get take-out.  After the success of our Japanese Steakhouse Fried Rice, we decided to tackle our other favorite fried rice recipe.  Like our other fried rice recipe, this one uses day old rice and cooks super fast.  The fried rice that you get from take-out utilizes smaller sized shrimp, but we used full size shrimp to turn this side dish into an entree!  Check out our recipe below.

1st Annual Smithfield BBQ Classic

Smithfield BBQ Classic

The 1st Annual Smithfield BBQ Classic was one of the best BBQ contests that I have ever been to!  The location, the guinea pig style competition and the company of Smithfield were all great.  The town of Smithfield is charming and the Smithfield staff were hospitable and amazing!  Arlie Bragg and Big Poppa Smokers put on a great competition. I mentioned before that this competition was a guinea pig competition.  This means that all of the teams received their meat from the organizer (Amazing Smithfield Prime pork and a Snake River Farms Wagyu Brisket).  Yep, everyone started with the same meat.  I love this concept.  It also included a Kids Que contest (Liam competed) and a delicious pot luck dinner the night before the competition.
