I know we are nowhere near Thanksgiving, but we like to have a nice Thanksgiving meal a couple times throughout the year to test new recipes. This time around we had a bunch of leftovers and thought some Thanksgiving leftover egg rolls sounded delicious! Spoiler Alert! These egg rolls were freaking fantastic! Plus, you get to dip them in gravy! Easily the best leftover dish that we have ever made. Trust me, we have made a ton.
I love the ease and convenience of a boneless turkey breast. However, I find that they can be quite dry sometimes. So, I decided to wrap one in bacon to see how it would turn out. The results were fantastic. This was definitely one of the best turkeys that I have ever eaten. It was moist, flavorful and best of all, easy to make! It was so simple that it should almost be illegal. If you are looking for a delicious and easy way to serve Turkey on Thanksgiving or any holiday for that matter, then this is your recipe.
One of my favorite methods of cooking a turkey is on the smoker. I find that the smoke adds some nice little notes that complement the turkey. Traditionally, I use just salt and pepper. However, I wanted to come up with a rub that would give me some mouth watering, super tasty turkey. I think I may have done just that.

I love to smoke a turkey for the holidays. I have discovered that the only way to smoke an amazing turkey is to brine the turkey (and to tell you the truth, I even brine my oven-baked turkeys now). Without brining, the turkey can be dry and tough. However, if you use a standard brine, the turkey is guaranteed to be juicy and tender. This year, I decided to step up my brining process by using a super flavorful broth. The results were downright amazing. I know you will enjoy!

Pork Belly Burnt Ends are the most delicious things that may ever touch your tongue. They are quite literally the best thing that I have ever made. We like to call them Melt In Your Mouth (MIYM) Bacon Cubes. These grew out of necessity and then turned into a sensation at my house. I had a pork belly that needed to be used and I did not have the time to cure it. So I cubed it, smoked it, and turned it into magical bacon goodness. If you can’t tell by now, I freaking love these things.

Smash Burgers are quite possibly the greatest burgers around! You take seasoned ground beef and smash it onto a griddle. You let the griddle caramelize one side of the burger and then flip, allowing a super tasty crust to form on the other side. These burgers cook quickly, allowing for the finished product to be juicy and delicious! These are hands down the best burgers ever. I love Smash Burgers!

Dana and I love Chuy’s Tex-Mex Restaurant! If you have one near you I recommend that you try it ASAP. Last year during their Hatch Chili Festival they had a limited time special menu that included Queso Fundido. What is Queso Fundido you ask? Well it is freaking glorious! Basically it is a Chorizo and cheese dip that you serve on warm flour tortillas. It is quite possibly the best cheese dish that I have ever had! The ooey gooey cheese and chorizo on a warm tortilla is straight up gold. My mouth is watering as I write this up! You have to try it.
