A double smoked ham is the perfect holiday meal.  First, it is delicious!  Second, it is cooked outside on a grill or smoker and as a result you have an open oven inside for all of your side dishes.  Finally, it is fantastic looking and smelling.  This meal is a show stopper and will make your guests’ jaws hit the floor.  Who doesn’t want to have a show stopping centerpiece for their holiday meal?!  This dish utilizes a fully cooked ham that you smoke and reheat on your grill or smoker.  It is so delicious!

A steak is just a steak until you add sides.  Then the steak turns into a meal.  Everyone always focuses on the main entree, but fails to put any thought into the supporting cast.  A good side can elevate an OK meal to a great meal.  For this reason, I like to focus on side dishes every once in a while.  Like today, I am making brown sugar glazed carrots.  These carrots are boiled in a sweet brown sugar glaze that perfectly cooks the carrots and glazes them with a sweet flavorful glaze.

Recreating a Baked Honey Ham

Last weekend was Easter and I wanted to try to recreate a popular Honey Ham.  I searched around for possible ideas and finally landed on one that was created by Family Circle Magazine.   Basically this uses a standard spiral cut ham and then dresses it up in a nice honey fashion.  When I was finished I personally liked it better than any ham that I have ever tried.

Goat Cheese Mashed Potatoes

Goat Cheese Mash

I have said it and I will say it again.  I love potatoes.  They are tasty, filling, and go great with cheese.  A couple of days ago I posted Braised Short Ribs.  They were delicious and created some of the tastiest gravy that I have ever had.  What goes great with gravy?  Potatoes.  What goes great with braised short rib gravy?  Goat Cheese Mashed Potatoes.

Whipped Red Skin Potatoes

I am in full Turkey Day mode.  To go with the turkey that I made yesterday, I decided to make some whipped red skin potatoes.  Red skin potatoes are my favorite.  They are not too starchy and they taste great.  Since they have less starch, they whip up nicely.  Plus, I like having the skins in the mashed potatoes.  It gives the potatoes a homemade feel and further emphasizes to your dinner guests that you actually made real mashed potatoes.  Another bonus, I think it looks cool.
