The weather here in DC has been all over the place. We have had snow one day and a sunny 65 degree day the next. Who knows what it is going to look like tomorrow. When it is nice, I like to take advantage of it, you never know when it is gonna snow. It just so happened that earlier this week we had a 65 degree day. So I immediately began planning a barbecue. It has been so long since I fired up the Weber that I did not know what to cook. So I researched a good barbecue recipe. I finally came upon a barbecue sauce recipe from Giada that used balsamic vinegar as the base. I was intrigued. So I made.

I was craving steak the other day so I went to the store to see what was on sale. Flank steaks were on sale so I picked one up. When I see flank steak I think of one thing, Fajitas. So I picked up some peppers and an onion and it was on.

My friends Ryan and Melissa have been promoting my site to all of their friends and have helped increase my readership. So in return, I decided to cook them dinner. I asked Ryan what he wanted and without hesitation he said ribs. This worked perfectly as I have been getting a lot of emails about cooking ribs on a gas grill. I have smoked ribs many times and posted about them a couple of times, but I have always cooked them on the smoker. I love my charcoal/wood smoker (Old Bessie), but I also love my new gas grill (Weber). I know its not a creative name, but a grill by any other name is just a grill. So with the help of Weber, I am going to tackle ribs on a gas grill.

Cooking them over indirect heat is the key. Ribs shed a lot of grease when cooked, so if you cook them over direct heat they will definitely burn. Burned ribs are a no-no. Weber told me so.

What is the ingredient that makes hot dogs awesome. Yep, it is cheese. What is the only thing that can make a cheese dog better, Yep, Bacon!!! So I stuffed the hot dog with cheese, wrapped it in bacon and slowly roasted it over indirect heat. In return I was given the greatest hot dog in the world. It had a great crispy crust and a creamy cheese center. It was basically the greatest hot dog ever.

I went to the market yesterday and they had some great looking artichokes. So I picked up a couple and figured that I would grill them. Plus it would give me the opportunity to break down an artichoke and document it for the website. Cleaning artichokes is easy but I can totally see why a person would be afraid to pick them up from the store.

Artichokes look scary but they are easy to work with once you know what you are doing.
I am going to prepare artichokes, grill them and make a cayenne and roasted garlic aioli for a dipping sauce.

I have been on a real pizza kick lately. Today I wanted to use some chicken breasts that I had in the refrigerator, but I didn’t want to just grill them. I also didn’t want to use the oven as it is still hovering around 95 degrees in DC. So I decided to make a grilled bbq chicken pizza. Grilling pizza is simple and it makes the crust taste awesome.

After reading the cookbook Weber’s Way to Grill, I wanted to grill some fish. I had no clue on what to grill. So I went to the store and looked through the selection. The only thing that looked good at the fish counter was Mahi-Mahi. So I picked up a couple of filets. When I got back I looked through the cookbook and found a great recipe for fish tacos. The original recipe called for haddock but mahi-mahi is a nice fish that is dense enough to grill so I figured this would work good.

Since I purchased my new grill I have been grilling non-stop. I wanted to make a grilled dessert but was lacking in ideas. Then I went to the supermarket and they had fresh peaches on sale. Then the light bulb went on. I am going to make Grilled Peaches.
