Smash Burgers

Smash Burgers are quite possibly the greatest burgers around!  You take seasoned ground beef and smash it onto a griddle.  You let the griddle caramelize one side of the burger and then flip, allowing a super tasty crust to form on the other side.  These burgers cook quickly, allowing for the finished product to be juicy and delicious!  These are hands down the best burgers ever.  I love Smash Burgers!

Greek Salad

I love a great Greek salad.   The mixture of kalamata olives, cucumber, feta and a tangy dressing, is just downright awesome!  I have been reworking my recipes to lower my salt and calorie intake.  Who knew that years of cheese, bacon and beer would not so great on my body.  I had no clue.  Haha.  Well it has caught up with me and it is time for me to try to shred some excess calories and salt via new recipes.  The only problem is that low calorie and low sodium food usually tastes like crap.  Well I have been trying a ton of new recipes.  Most of which sucked.  So that is why I have been a little absent from the blog.  Well this recipe is a winner.  The flavors are so strong and delicious you will not miss the added salt.  The salt in the feta and olives is enough to season the entire dish.  As for calories, this recipe is not super low in calories, but it is not too shabby on calories.

I am a sucker for sweet and spicy flavor profiles.  So when we had a few chicken breasts lying around and a can of pineapple chunks, I knew that I had to make kabobs.  To be honest, I have never been to Hawaii or even had traditional Hawaiian food.  So the authenticity of this dish is not purely Hawaiian, but Hawaiian in style.  These Hawaiian Chicken Kabobs are a chicken kabob coated in a sweet and spicy sauce that takes you right to the beach.

Labor Day Menu

Here is my Labor Day Menu.  All grilled, all the time.  It is the end of the summer and you and your family should spend the entire day outside.  For that reason, my whole menu is cooked outdoors.  It starts with some delicious shrimp and ends with a grilled nectarine.  Also, included is a nice grilled lemonade cocktail that will keep you socially lubricated all day.  Enjoy!

I love chicken!  It is the perfect blank canvas for any flavor.  One of my favorite flavors to impart on chicken is lemon pepper. A little tart with a little bite.  The perfect combination.  Lately, I have come up with a new way to skewer chicken that gives you an added oomph of flavor.  It works with any sauce and works especially well with marinades.  The chicken is thinly sliced and then braided onto a skewer.  That way you have little nooks and crevices that allow the sauce and marinade to pool.  Then when you eat the chicken you get flavor bursts that enhance the experience.

Brat Sauce AKA Stadium Sauce

When I was in college we would always go and watch Brewer’s Games.  The best part of the game besides the baseball, and beer, was a Brat covered in a tangy brat sauce called Stadium Sauce.  Stadium Sauce is a hybrid sauce that balances well with the juicy brat.  I have been working on the exact proportions of ingredients for a while.  I have finally figured out a recipe that mimics the real sauce and in my opinion may have even beat it.  So when you are grilling out brats for memorial day you need to try this recipe out.

How to Split and Grill Lobster Tails

The weather is finally making a turn for the better.  It is about time that spring has finally sprung upon us.  To celebrate spring, I picked up a few lobster tails on special.  I usually skewer the tails but decided to cook them in a different way. In this method I completely split the shells opening up more area to char on the grill.  It imparts the most smoke flavor to the lobster that I have found.  Plus it is simple, quick and delicious!  Did I mention it is easy to eat!  If you are looking for a great recipe with a more elaborate presentation, check out my how to grill lobster tails post.

Coal Roasted Sweet Potatoes

I love baked sweet potatoes, but they take so long to make.  Plus, you have to heat up your oven and thereby heat up your house.  Not what you are looking for when it is hot outside.  So I started to roast the sweet potatoes in coals of the grill.  You need a charcoal grill for this method, but it is worth it.  The high heat sears the outside and makes the sweet potatoes come out super sweet and tender in around 45 minutes.

Chipotle Lime Shrimp

I love shrimp so much that I purchase it whenever it is on sale.  I don’t mind buying frozen shrimp as all of the shrimp sold in supermarkets/fish markets where I live sell previously frozen shrimp.  Therefore, I like to thaw the shrimp under my own conditions. I usually thaw it in a strainer that is covered in the refrigerator for at least 12 hours before I want to cook them.  This recipe is simple, but it packs a ton of flavor.

Marinated and Grilled Cherry Tomatoes

Grilled Cherry Tomatoes

I love tomatoes!  I am the weird guy at parties that eats the cherry tomatoes in the vegetable tray.  It seems as if I am the only person that eats them.  So I decided to grill some up as a side dish.  They were delicious!  They were a tad bit tart from the balsamic vinegar making them a great side dish to accompany any grilled meat.
