For Christmas I received a Blackstone Griddle. It is the most used gift that I have ever received. I cook everything on it, from Japanese steakhouse fried rice to smash burgers. We love fried rice so much that I decided to come up with a recipe to go along with some Fajitas. I combined some tomato sauce, chiles and seasonings to make some of the most delicious fried rice that I have ever had. It is a huge hit at our house!
Dana and I love Chuy’s Tex-Mex Restaurant! If you have one near you I recommend that you try it ASAP. Last year during their Hatch Chili Festival they had a limited time special menu that included Queso Fundido. What is Queso Fundido you ask? Well it is freaking glorious! Basically it is a Chorizo and cheese dip that you serve on warm flour tortillas. It is quite possibly the best cheese dish that I have ever had! The ooey gooey cheese and chorizo on a warm tortilla is straight up gold. My mouth is watering as I write this up! You have to try it.
I love Chipotle! It is delicious, so I decided to recreate a burrito bowl. I utilized my fajitas seasoning, skirt steak, some black beans, cilantro lime rice, salsa and guacamole to create one of the greatest meals known to man. Dana said it was her favorite meal ever! That says a lot. The combination of rice, black beans, meat and cheese is Amazing!
So I am slowly building up the ingredients to make my own burrito bowl. So far we have made some kick butt salsa and guacamole. Next in line is the cilantro lime rice. I have tried this a bunch of different ways, but this is my favorite. It uses lime zest and lime juice. Make sure to zest the limes before juicing. Learned that the hard way. This recipe does a great job recreating the cilantro lime rice from the burrito chains. This makes enough for 4 burrito bowls.
We are on a Tex-Mex kick here on the blog and the next condiment that Dana and I wanted to make was Guacamole. I love Alton Brown so I wanted to try out his version of the classic dish. I must say that he hit a home run with it. We used this recipe. it was well balanced, not too spicy and downright delicious!

These are top notch chiles, fire roasted, seeded and then flash frozen. They then deliver them right to your door in a cooler filled with dry ice. Pretty much the only way to get Hatch chiles on the east coast. Once we received them we knew right away that we wanted to make some green chile enchiladas.

I have always wanted to make shredded chicken tacos. I finally decided to make them. I was a little uncertain on how to make them, but after a little trial and error, I came up with a surefire method. I boiled the chicken in the spices, shredded the chicken, returned it to the sauce and reduced. Overall, the chicken was some of the best I have ever eaten. I am not sure if my method is the proper way to make shredded chicken taco meat, but it was simple and delicious.
