I have been experimenting with pizza crusts. So I have a ton of pizza dough lying around. You can only have so many pepperoni pizzas before you need to find something different. So I decided to try my hand at breakfast pizza. If you have been near a TV at all over the past couple of days you know that it has snowed here in DC. It has snowed a lot, roughly 27 inches. I have a front wheel drive car and there is no chance of me getting out of my house for another day at least. So I had to substitute a few ingredients in my breakfast pizza. Normally I would use salsa as the base, but since I had none and there was no way of me getting to the market. However, I did have a can of diced tomatoes. So I substituted that. It was still good, but salsa is the best.

The pizza browned nicely and allowed the eggs to finish setting. The best way to start the morning.

Last week I went to the local Safeway and they had an amazing deal on rotisserie chickens. Only $5. So I decided to purchase one and make a couple of recipes. Using the roasted chicken you can quickly make a couple of meals. There is plenty of meat on the bird and the bones can be used to make a nice stock or even a whole chicken noodle soup. The first recipe is inspired by the upcoming football game weekend. You know the one. I would call it by its name but I don’t want to get sued. Hand-held foods are the best for football parties.

This quesadilla is quick, easy, portable and totally delicious.

While bacon is the ultimate food, not all bacon is created equal. Granted all bacon is good, but some bacon is just a tad bit better. Today I turned the ordinary bacon in to extraordinary bacon. How do you do this? With a bit of brown sugar, Pure Grade A Michigan Maple Syrup and some thick cut apple smoked bacon, that is how.

I always seem to bbq an extra chicken breast every time that I grill. I have no idea why there is an extra one, but there is always an extra. So I decided to come up with a great way to use the leftovers. On a side note, this use of bbq chicken leftovers is so good, I actually grill chicken to make it. Yep, it is chicken smothered in bbq sauce and layered with bacon and cheese. Oh, I forgot the best part. It is all in a potato bowl. How awesome does that sound?

Well all of that bacon, butter, ice cream and deep frying has gone to my waist. Time to start eating healthier. Well, at least once a week. Also, not too healthy as I need to have my daily dose of bacon. But, here is the start.

Bacon Quinoa with a Poached Egg
Quinoa sounds like (key-new-a) is a grain-like crop that is full of protein, contains essential amino acids and is also gluten free. Unlike cereals like wheat or rice, quinoa is a edible seed from chenopod which is a close relative of the tumbleweed. Sounds gross, I know, but this stuff is good for you. For being a complete protein source it tastes really good. Although, that maybe because I started with bacon fat, but anyways it goes great with bacon. It has a texture similar to couscous and can be used an alternative for couscous or rice.

This past weekend my parents came to visit me out in the Nation’s Capital. I decided to barbecue and my Mom made the sides. She made these amazing baked beans with bacon, onions and ground beef. I had to get the recipe as they were delicious.

This weekend I woke up with a little hangover and wanted to have a nice breakfast. When I walked into the kitchen all I found was a potato, onion and four mushrooms. What to do? The first thing was to add bacon to it. Without bacon fat, my hangover was not going anywhere. Next I found a couple of eggs and I was on a roll. Luckily, my Mom sent me a new food processor that could shred that potato in a second. Clearly the stars were aligning in my kitchen.

So I have been getting a ton of emails and comments from my friends that I have failed to make a bacon dessert. So I decided to make chocolate covered bacon. Salty and sweet and 100 percent awesome!!! Before I started, I discussed the possibilities of chocolate bacon with my friend Jeff and his sister Spud. Spud had a some insight into the process behind chocolate covered bacon. She told me that the bacon had to be extremely crispy and the chocolate tasted better when it was dark chocolate as opposed to milk chocolate. So I picked up a pound of bacon and 8 ozs of Ghirardelli.

I must admit that the salty sweet factor in choco-bacon is a great combination.
