Breakfast Pizza

I have been experimenting with pizza crusts.  So I have a ton of pizza dough lying around.  You can only have so many pepperoni pizzas before you need to find something different.  So I decided to try my hand at breakfast pizza.  If you have been near a TV at all over the past couple of days you know that it has snowed here in DC.  It has snowed a lot, roughly 27 inches.  I have a front wheel drive car and there is no chance of me getting out of my house for another day at least.  So I had to substitute a few ingredients in my breakfast pizza.  Normally I would use salsa as the base, but since I had none and there was no way of me getting to the market.  However, I did have a can of diced tomatoes.  So I substituted that.  It was still good, but salsa is the best.

The pizza browned nicely and allowed the eggs to finish setting.  The best way to start the morning.

No Knead Pizza

Over the last couple of weeks I have started to make No Knead Bread every other day. Why? It is really tasty and takes no effort. Mix, let sit a day and bake. Nothing more, nothing less. Every time that I bite into the amazing crust of this bread, I think, this would be an awesome pizza crust. So, I made a pizza with it. How did it fare? Read on….

Chicken Spinach and Mushroom Pizza

The other day I wanted to make a little lighter pizza that did not have the heavy red sauce on it. So I decided to make a nice light chicken pizza. With a base of seasoned whipped ricotta topped with chicken and sauteed spinach and mushrooms. It was one of tastiest pizzas I have ever made.

On a side note, make sure that your ricotta cheese is good.  Mine had an expiration date of two weeks from now and it was moldy.  Yeah, I know.  So gross.

Sorry to everyone for being gone the last couple of days. I appreciate all of your thinking of me. On a side note – Guess who doesn’t have to stand in line for a swine flu shot, Yep me!!! I got the antibodies the hard way. 48 hours with a 102+ temperature. However, I am back. I have come with pizza. Not any pizza, a roasted butternut squash pizza. Savory and Sweet it was the perfect comeback recipe.

Football Food – Buffalo Chicken Pizza

Yesterday I had friends over to watch College Football.  We were hungry and I didn’t have much in the house.  However, I had some frozen wings, some wingsauce and 1 hour to make a pizza dough.  So I made Buffalo Chicken Pizza.  Super simple and so darn tasty.

Chicago Deep Dish Pizza

I have been making pizzas quite a bit on the blog. My old roommate Mark asks me each time I post a pizza, when are you going to write about the Chicago style pizza you used to make back in college. Well Mark, this one is for you. Quite frankly I was scared to recreate this meal, as it contains over 5lbs of food. Granted I could only eat one slice, but come on, it is pizza. So here is my recipe for the Deep Dish.

Grilled BBQ Chicken Pizza

I have been on a real pizza kick lately.  Today I wanted to use some chicken breasts that I had in the refrigerator, but I didn’t want to just grill them.  I also didn’t want to use the oven as it is still hovering around 95 degrees in DC.  So I decided to make a grilled bbq chicken pizza.  Grilling pizza is simple and it makes the crust taste awesome.

Instead of just mozzarella I also used a smoked fontina cheese to add to the bbq flavor.

School Cafeteria Pizza

A couple of weeks ago a reader emailed me and asked me if I could recreate the square school cafeteria pizza that we all ate when we were younger.  I didn’t think it would be that hard.  I love pizza and recreating the pizza that I grew up with shouldn’t be that hard, right?  Well it took a little time.  I tried a standard pizza crust, but it did not come out right.  The crust of the pizza at school was a lot sweeter and didn’t have a complex flavor.  So I started from scratch.  Flour, water and salt.  Then it was either too light or too dense, and it was not sweet enough.  Then I added some sugar, fixed the water at a standard amount and added flour until it was perfect.  Then came the sauce.  The sauce was also sweet and rather basic.  So I grabbed a couple of cans of tomato sauce and paste and worked it until it was perfect.  The hardest part as there is nothing like it online or in cookbooks.  Nobody has successfully recreated the pizza that I loved as a child.  Until now.  It is pretty darn tasty.  Even though my palate has evolved since childhood, the first bite of this pizza brought me right back to grade school.
