I love a great Greek salad. The mixture of kalamata olives, cucumber, feta and a tangy dressing, is just downright awesome! I have been reworking my recipes to lower my salt and calorie intake. Who knew that years of cheese, bacon and beer would not so great on my body. I had no clue. Haha. Well it has caught up with me and it is time for me to try to shred some excess calories and salt via new recipes. The only problem is that low calorie and low sodium food usually tastes like crap. Well I have been trying a ton of new recipes. Most of which sucked. So that is why I have been a little absent from the blog. Well this recipe is a winner. The flavors are so strong and delicious you will not miss the added salt. The salt in the feta and olives is enough to season the entire dish. As for calories, this recipe is not super low in calories, but it is not too shabby on calories.

I am always on the lookout for a new pasta salad. Pasta salads are the perfect side dishes for bbqs. If you are spending all day outside cooking, the last thing you want to do is run in the house and cook sides. Pasta salads can be prepared the day before and they are cool so they are perfect for when it is super hot outside. I came up with the idea for this salad after eating my favorite brick oven pizza, The Margherita Pizza. That amazing pie covered in mozzarella, tomatoes and basil.
This pasta salad is the perfect side for any barbecue.
A couple of months ago I tackled Pizza Hut’s Macaroni Salad. I was off by a bit and I finally tried it again. The salad was close, but it needed just a few flavor enhancements to make it perfect. I tried the macaroni salad ten times and finally figured out the secret ingredient that makes it all come together. While you don’t see it, you definitely taste it. Drum roll please….. Black Olives. Yep, it doesn’t take a ton and the ones in there are diced so fine that you don’t see them. However, when a couple olives are added, it transforms the whole salad to pure awesomeness.
The salad is creamy and delicious.
Growing up we would always stop by the Colonel’s and pick up Coleslaw for all of our coleslaw needs. Even when we didn’t need a special recipe drumstick we still picked up the coleslaw. Mainly because it was tasty and finely diced. The smaller dice allowed for a creamier coleslaw. So ever since that day I have been trying to make it. I searched online and there are hundreds of recipes claiming to be it. I have tried most of them, and this one seems to be the best. This is a popular recipe on the internet and nobody seems to know where it came from. Some suggest an employee stole it, but in the end, it was probably an ingenious food blogger with a severe case of munchies.
I have tried this with sliced cabbage and it did not taste the same. Something about the small dice changes this coleslaw into something magic.
I am always looking for a new way to spice up a salad. So when I came across this recipe, I knew I had a winner. Grilled tomatoes and bread served over a nice green salad. The smokiness of grilled tomatoes and bread add a unique flavor to this salad.
Today is the second and final day of what to do with a store bought rotisserie chicken. Basically last week I was shopping and they had whole roasted chickens for $5. It was such a good price I could not pass it up. Yesterday I used half of the chicken to make bbq chicken quesadillas. They were delicious and fast to make. Today I am going to tackle chicken salad. I love a mixture of dark and light meat in my chicken salad. So I saved the legs, 1 thigh and 1 breast for today. Further I made another loaf of No-Knead Bread which went perfectly with the chicken salad.

When I was a kid my parents would take me to Pizza Hut for the pizza and salad bar buffet. It was the best time as it was all you can eat breadsticks and pizza. Before diving knee deep into the pizza I always went to the salad bar for a quick healthy snack. That is when I fell in love with the macaroni salad. It wasn;t like most macaroni salads. It was full of pimentos and relish. I have been looking for a good recipe for this type of macaroni salad for a while. Finally my Mom and I figured out a recipe. It is basic, but it is really good.
Delicious and simple. This reminds me of the salad that I used to eat at Pizza Hut!
- 1 Pound Elbow Macaroni
- 3/4 Cup Sweet pickle relish
- 4 Oz Pimentos diced
- 1 Stalk Celery finely diced
- 1/2 Medium Onion finely diced
- 1 1/2 Cups Mayonnaise
- 1/2 Cup Sour Cream
- 1 tsp sugar
- 1/2 Cup Milk
- 1 1/2 tsp Salt
- 1/2 tsp Pepper
Drain and dice up the pimentos
Add the pimentos and sweet pickle relish to a large clean bowl.
Add the celery and oinions
Next add the mayonnaise, sugar, sour cream and milk. Stir the mixture until the mixture is creamy.
Add the macaroni and mix thoroughly. Taste and add the salt and pepper. Refigerate for 30 minutes before serving.
After the salad sits for at least 30 minutes, eat and enjoy!!
It is a little sweeter than most macaroni salads, that is probably why I loved it as a kid.
