When I was growing up, my Grandma Donna would always make twice baked potatoes for me.  They were my favorite.  So, I decided that I had better find her recipe and make some for my kids.  My version has a little twist, however.  It includes your favorite magical meat….BACON!!!!  This recipe is simple and super delicious!  Though it takes a little longer to make than a simple baked or mashed potato, it is totally worth it your time and effort.  This may even be a great recipe to try for your Thanksgiving dinner!!!

For Christmas I received a Blackstone Griddle.  It is the most used gift that I have ever received. I cook everything on it, from Japanese steakhouse fried rice to smash burgers. We love fried rice so much that I decided to come up with a recipe to go along with some Fajitas.  I combined some tomato sauce, chiles and seasonings to make some of the most delicious fried rice that I have ever had.  It is a huge hit at our house!

Fresh Sweet Potato Casserole

I love sweet potatoes at Thanksgiving!  This fresh sweet potato casserole is a new and improved take on my previous sweet potato casserole, that was based on the one from Ruth’s Chris.  This new and improved recipe, while inspired by my previous one, throws everything out the window and starts from scratch.  It is the perfect balance of sweet and savory.  It quite possibly is one of the best side dishes that I have ever made.  You definitely need to add this Sweet Potato Casserole to your Thanksgiving table!

Cilantro Lime Rice

So I am slowly building up the ingredients to make my own burrito bowl.  So far we have made some kick butt salsa and guacamole.  Next in line is the cilantro lime rice.  I have tried this a bunch of different ways, but this is my favorite.  It uses lime zest and lime juice.  Make sure to zest the limes before juicing.  Learned that the hard way. This recipe does a great job recreating the cilantro lime rice from the burrito chains.  This makes enough for 4 burrito bowls.

We recently got a new rice cooker.  It is a zojirushi rice cooker and it is freaking awesome!  and I wanted to expand our repertoire of rice dishes beyond just white long grain rice.  So I decided to come up with a new recipe that would utilize the rice cooker but impart a ton of flavor.  So I substituted the water for chicken broth and then added herbs and onions to enhance the flavors. This was some of the tastiest rice I have ever made.
