With the sudden drop in temperature and the start of football season, I have been craving chili. I have made a ton of chili recipes, but wanted to create one that emphasized corn and black beans. The combination of corn and black beans just intrigues me. So I went through my spice cabinet and started grabbing spices. After a few changes, I got the flavor that I was craving. This chili ended up being one the tastiest that I have made. The addition of the corn kernels added a nice texture and flavor. You have to try this chili.
In the top menu bar of this website you will see a tab that says “Ask Rex”. This is the section of the website where you can ask me to recreate a recipe, come up with a recipe or add bacon to your favorite recipe. One of my readers, Ashley, asked me for my take on a traditional Maryland dish, Cream of Crab Soup. She specifically asked if I could find a way to incorporate bacon. Well this is right up my alley. I have been experimenting with a few variations and came up with perfect Cream of Crab and Bacon Soup.
I have always wanted to enter into a chili competition but never had the time. So I decided I would make a nice competition chili at home to see what the differences are between it and normal chili. For one, Competition chili does not have beans. It can not have any fillers such as noodles … Read moreCompetition Chili
It has been pretty cold here in Richmond for the past few weeks. I really enjoy the cooler weather as it allows for me to crank up the stove and oven and get to cooking. The summertime here is extremely hot and the last thing you ever want to do is add a little extra … Read moreAwesome Beef Stew
I was looking for a nice healthy dinner the other day. I was thinking back and remembered a recipe that my Grandma Donna gave me. It was for white chili. It is simple, easy and quite delicious. Plus, it utilizes chicken instead of beef. Another good thing is that the only real sodium in it, … Read moreWhite Chili
Although it doesn’t seem to get that cold here in Richmond, we did have a nice cool spell where we had a few days in the 60s. As soon as I felt a little chill I wanted to make soup. I love soup and in turn I really enjoy making it. You put in a … Read moreChicken and Dumpling Noodle Soup (From Scratch)
I woke up hungry for a chili dog. Not just any chili dog, a Coney Island style chili dog. You know, the one with the chili that is all meat and very finely chopped. Almost resembles a sloppy joe if it were not for that spicy kick. So I went on a quest for the … Read moreConey Island Hot Dog Chili
The other day Dana was craving Beef Stew. It was cold outside and I thought it was a great idea. So I went to the store found a great deal on some chuck steak and went for it. Watch out when you go to the store. If they have pre-cut stew meat, ask the butcher. … Read moreBeef Stew Remix
Starch Starch Starch, I love Starch. This is the greatest meal I have ever had. It is based on one that I had a Bob Evans Restaurant. It is basically a Biscuit, topped with mashed potatoes, topped with chicken noodle soup. Amazing!! This was one meal that I was extremely happy that I had leftovers of.
I can not emphasize how much I enjoyed this meal. Noodles, potatoes and a biscuit, so many carbs, so frickin awesome.
The other day I was strolling through the Crate and Barrel Outlet when I saw French Onion Soup Crocks for $1.99. I had to pick up a couple. Since then I have been on the hunt for a tasty French Onion Soup recipe. Most called for cooking the onion over the stove-top until they were caramelized and tasty. But after finding this version from Cookography via Cook’s Illustrated I had to make it. This version roasts the onions in the oven to help build a nice complex flavor. It is extremely tasty.
Topped with homemade croutons and Provolone Cheese this was the best French Onion Soup I have ever had.
Last week was the big game. I was really excited that the Saints won. Mostly because of my hatred for Peyton Manning. Besides that, I loved the game because I got to make my Super Chili. I recreate this awesome recipe once a year on a Super Sunday! Last Sunday was the big day. The chili is full of meat, beans and has a tad bit of heat. Served with a dollop of sour cream, it is amazing!
I like to serve the chili over freshly baked corn bread. The combination is to die for!
I was craving tomato soup the other day. So I scoured the internet to find a suitable soup for dinner. After looking around I settled on a soup that was based on canned tomatoes. I know, but it is winter here and the fresh tomatoes, well they suck. This soup roasts the tomatoes to give them a little kick. You won’t even know they came from a can.
I served this retro style with some grilled cheese. Awesome!!
My Grandma Donna would always make me Chicken Chili when I would visit her. It was extremely tasty and included only a handful of ingredients. Since it has been getting colder around here I decided to make some.
Top with a little cheese and this chili is amazing!!
