BBQ Chicken Quesadillas

Last week I went to the local Safeway and they had an amazing deal on rotisserie chickens.  Only $5.  So I decided to purchase one and make a couple of recipes.  Using the roasted chicken you can quickly make a couple of meals.  There is plenty of meat on the bird and the bones can be used to make a nice stock or even a whole chicken noodle soup. The first recipe is inspired by the upcoming football game weekend.  You know the one.  I would call it by its name but I don’t want to get sued.  Hand-held foods are the best for football parties.

Jambalaya

A couple of weeks ago I received a request from one of my readers (Cedric) to do a rice dish.  I love rice so I knew this was going to be a great suggestion.  I started to think about what I like in dish.  Meat, veggies and a great flavor.  One of Cedric’s suggestions was to do a Jambalaya.  This sounded great.  So I started to research Jambalaya’s.  Most used pre-cooked protein and/or required a lot of work.  I wanted a one pot dish that would be tasty and full of flavor.  So I decided to make a chicken, andouille and shrimp Jambalaya.  Yep, a kitchen sink Jambalaya.

Chicken Nachos

I love nachos!!!  Yep, three exclamation points.  Besides being delicious they are quick and easy to make.  Take a few tortillas, cover with your favorite ingredients, and then coat with cheese.  Melt and serve.  Howe easy can that be.    My favorite type of Nachos are Chicken Nachos.

Chicken Spinach and Mushroom Pizza

The other day I wanted to make a little lighter pizza that did not have the heavy red sauce on it. So I decided to make a nice light chicken pizza. With a base of seasoned whipped ricotta topped with chicken and sauteed spinach and mushrooms. It was one of tastiest pizzas I have ever made.

On a side note, make sure that your ricotta cheese is good.  Mine had an expiration date of two weeks from now and it was moldy.  Yeah, I know.  So gross.

I finally broke out the stone again after getting a new pizza peel. So much better than using a pizza pan.

My Grandma Donna would always make me Chicken Chili when I would visit her.  It was extremely tasty and included only a handful of ingredients.  Since it has been getting colder around here I decided to make some.

Cheap Eats – Chicken Bake for $1.69 a person

I have been getting a lot of emails from people who want quick and easy recipes that are cheap. So for now on, I am going to devote thursdays to cheap eats.  In this economy people want to save money and an easy way to do that is by cooking at home. Cheap food does not have to be bad either. For instance I made this chicken bake for $6.74, or $1.69 per person. I purchased the ingredients on sale and that was the reason why it was so cheap. For instance, instead of having to purchase cheese, which is not cheap, I purchased frozen vegetables in cheese sauce. They were on sale for $1.49 a bag. I used half a bag of broccoli and half a bag of cauliflower in this recipe for a total of $1.49. Sure beats buying cheese at $3 for a 8 oz bag.

Chicken Tacos with Homemade Tortillas

Happy Cinco de Mayo! In honor of today I wanted to make a classic mexican dish.  At first I wanted to make steak tacos with homemade tortillas. But, it just so happened that everyone around me had the same idea. There wasn’t a single flank steak to be found within 10 miles. So I changed it up and made chicken tacos.  Luckily there just happened to be a few chickens at the market.

These chicken tacos are so easy.  Even with making your own tortillas it was on the table in 2 hours.  30 minutes or less with store bought tortillas.

Chicken Stir Fry

Spring is here and it is time to do a little spring cleaning. So, today I decided to clear out my pantry. What is the best way to clear out a pantry you ask? Why it is a stir-fry. You can throw in whatever veggies, meat or random ingredients that you have.  This is slight variation on my Mom’s classic Stir Fry.  Thanks Mom!
