I love shrimp so much that I purchase it whenever it is on sale.  I don’t mind buying frozen shrimp as all of the shrimp sold in supermarkets/fish markets where I live sell previously frozen shrimp.  Therefore, I like to thaw the shrimp under my own conditions. I usually thaw it in a strainer that is covered in the refrigerator for at least 12 hours before I want to cook them.  This recipe is simple, but it packs a ton of flavor.

Breakfast Fatty

In the bbq world everyone talks about fatty’s.  The Gist of it is a smoked log of sausage.  I did a quick take on it by stuffing the log of sausage with my favorite breakfast items.  It is hash browns, cheese and hard boiled eggs wrapped in sausage and bacon.

Grilled Hot Wings

It is officially football season!  There is no better football snack than Hot Wings.  I have been on a little hot wing kick lately.  I have been eating them at least once a week. Although your average hot wings are delicious, they are not the healthiest thing around.  So, I decided to put away the deep fryer and heat up the grill. Grilled wings are just as tasty and if you grill them over high heat, the skin will get nice and crispy.  By grilling the wings you get all of the flavor and texture, without all of the fat.

Yesterday I had friends over to watch College Football.  We were hungry and I didn’t have much in the house.  However, I had some frozen wings, some wingsauce and 1 hour to make a pizza dough.  So I made Buffalo Chicken Pizza.  Super simple and so darn tasty.

Homemade Cayenne Hot Sauce

Today I was out in my Urban Garden watering it and tending to my herbs.  Then I noticed that my Cayenne peppers were ripe.  I had about 25 peppers.  Besides the Cayenne peppers I had about 15 Jalapenos and Serranos.  What could I use 40 peppers for I asked?  Hot sauce.  This time I was going to make a bright red traditional sauce.  The cayenne peppers would be the base and I would add a few of the other peppers for flavor and spice.

One Pan – Macaroni and Cheese

Over the past week I have been cleaning out my pantry trying to cook everything that I could without going to the grocery store. Needless to say, I was running low on everything. Then I noticed that I had a bag of mozzarella cheese in the fridge and about a 1/2 cup of milk. Sounds like Macaroni and Cheese to me.

So creamy and delicious.  Makes you wonder why you ever buy the box stuff.

This recipe is quick and easy. Only took about 10 minutes to make, not counting the 5 minutes to heat up the water. Heating up water isn’t really cooking and thus does not count towards cooking time.

And the winner of the 2nd annual Wingtacular is…

First I would like to thank all of the contestants and judges for this years wingtacular.  We had a great turn out.  Due to the rain I thought it would be a bust but everyone came out in force.  I would also like to thank my parents for sending me a deep fryer.  We could not have cooked all 40lbs of chicken without it.

For this years wingtacular we had a turkey fryer working hard for 3 hours straight to cook the 40lbs of hot wings.  We did 3 qualifying rounds. During each round each competitor was given wings and they had to sauce them and prepare plates for the judges and the popular vote.

Chicken Tacos with Homemade Tortillas

Happy Cinco de Mayo! In honor of today I wanted to make a classic mexican dish.  At first I wanted to make steak tacos with homemade tortillas. But, it just so happened that everyone around me had the same idea. There wasn’t a single flank steak to be found within 10 miles. So I changed it up and made chicken tacos.  Luckily there just happened to be a few chickens at the market.

These chicken tacos are so easy.  Even with making your own tortillas it was on the table in 2 hours.  30 minutes or less with store bought tortillas.

Homemade Hot Sauce

The wingtacular is coming up in a couple of weeks and I wanted to give a little help to the competitors. The basis of any good wing sauce is a good hot sauce. Over the counter hot sauces are good, but if you make your own you can control the ingredients and the amount of heat.  As always, nothing compares to homemade.

I went to the local grocery store last night looking for a nice mix of peppers to create my hot sauce. The main problem was that they were extremely limited in their selection. So for this hot sauce I am making a green hot sauce. It still has the spiciness that I look for in a hot sauce but it has a different color and more of an earthiness to it.
