Who doesn’t love bacon onion jam pizza? The combo is quite possibly the best freaking pizza on earth! No Joke. As you can tell, we are still on a pizza kick. We have been running the Pizzeria Pronto through its paces and I must say, it is becoming our go to pizza making machine. It is quick, easy and makes delicious pizzas. The Pizzeria Pronto combined with bacon onion jam is unstoppable.
A couple of weeks ago, I made a batch of Bacon Onion Jam. It was the one of the greatest condiments that I have ever had. I love it so much, that I put it on everything. During one of my tests I put it on a grilled cheese sandwich. After a little testing with various cheeses and breads, I discovered the perfect combination. It was the most delicious grilled cheese that I had ever had. You have to check it out!
Last year I appeared on the TV show American Grilled. On that show I competed against Big Jim Stancil of Bareknuckles BBQ. We kept in touch after the show and started to chat about all things bbq and grilling. During one of those chats, he asked if I would like to go to the Jack Daniels BBQ Championship and help him out. I could not say no. Come on, it was the Jack! While there I helped Big Jim do a little grilling for the teams up on the hill. The dish that Big Jim made, was an elk burger topped with a bacon onion jam. Ever since that day, I have been dreaming of that bacon onion jam. It was slightly sweet, slightly salty and all around bacon-y. It was delicious! So this is my take on bacon onion jam. Thanks for the idea Big Jim.
The other day I wanted something sweet and Dana suggested those little sugar cookies with jam in the middle. Then it hit me, I had a ton of Strawberry Jam in the freezer from when my parents visited. This would be the perfect combination. Strawberry Jam Cookies.

Sorry I was absent this past weekend. My family came in to town to surprise me on my Birthday. It was a ton of fun. My Mom even restocked my freezer with Strawberry Jam. I know what you are thinking, Strawberries are not in season. Well thanks to the global marketplace, Strawberries are always in season. Granted they are not in season, but they were so perfect looking I had to pick up a couple of pounds. Plus, my Mom was in town and I love her Strawberry Jam. So March strawberries had to do.
Once container of the jam lasts about 3 weeks in the refrigerator, but in reality it is eaten in a couple of days.
