Dana and I are huge fans of pizza. Dana’s favorite pizza is a white pizza. White pizza is different from your average pizza, as it does not have a red tomato based sauce. White pizza has a garlic oil base and is then topped with a trifecta of cheeses. It is basically, cheesy garlicky awesomeness.
My son loves meatballs. Therefore, we have them at least once a week in our house. Since we have them so much, I get a little meatballed out. So I decided to make a little twist on the traditional meatball. I stuffed them with soft and gooey mozzarella cheese. These mozzarella stuffed meatballs are amazing! They are a must try, and have become the go to meatball recipe for our weekly meatball meal.
Pepperoni Pinwheels are the ultimate appetizer. They contain all of the ingredients from everyone’s favorite meal, Pizza! They are easily shared and can be dipped in your favorite pizza/marinara sauce. Pepperoni Pinwheels are like mini pepperoni pizza sans pizza sauce. Therefore you can eat them in your favorite white shirt without too much worry. This is quite possibly one of the best appetizers that I have ever made.
My wife Dana is from New York City! When we visit NYC, we like to purchase food items to bring back Virginia. One of those food items is fresh pasta. Our favorite is Manicotti. You just can’t beat the flavor of the pasta, from the pasta stores in New York. Since we haven’t been to NY in a while, our stash has run dry. Yesterday I made homemade Tomato Soup. Nothing pairs better with Tomato Soup than a grilled cheese. I wanted to create the ultimate grilled cheese. To do that I had to take a trip to the supermarket. I wanted a nice thick crust so I started with a Rustic Wheat Bread. Hand sliced to perfection. Then I picked up the only ripe tomato available in all of DC. Finally I spent a little time in the cheese department. The base was Mozzarella. Great flavor and melts wonderfully. Next came the nice cured Manchego cheese. This sheep’s milk cheese melts great when shredded and has an amazing creamy texture and a slight salty taste. Perfect for a grilled cheese. Finally came the Gruyere. A cow’s milk cheese that has a great texture and flavor that works well with the other cheeses used in this Ultimate Grilled Cheese.
I love grilled cheese and this is the best I have had.
The other day I wanted to make a little lighter pizza that did not have the heavy red sauce on it. So I decided to make a nice light chicken pizza. With a base of seasoned whipped ricotta topped with chicken and sauteed spinach and mushrooms. It was one of tastiest pizzas I have ever made.
On a side note, make sure that your ricotta cheese is good. Mine had an expiration date of two weeks from now and it was moldy. Yeah, I know. So gross.
I finally broke out the stone again after getting a new pizza peel. So much better than using a pizza pan.
Sorry to everyone for being gone the last couple of days. I appreciate all of your thinking of me. On a side note – Guess who doesn’t have to stand in line for a swine flu shot, Yep me!!! I got the antibodies the hard way. 48 hours with a 102+ temperature. However, I am back. I have come with pizza. Not any pizza, a roasted butternut squash pizza. Savory and Sweet it was the perfect comeback recipe.

Over the past week I have been cleaning out my pantry trying to cook everything that I could without going to the grocery store. Needless to say, I was running low on everything. Then I noticed that I had a bag of mozzarella cheese in the fridge and about a 1/2 cup of milk. Sounds like Macaroni and Cheese to me.
This recipe is quick and easy. Only took about 10 minutes to make, not counting the 5 minutes to heat up the water. Heating up water isn’t really cooking and thus does not count towards cooking time.
