With a toddler running around the house Dana and I have limited time to cook. We love lasagna, but having to haul out the giant stock pot to boil the noodles is a pain. Besides the extra dishes, the extra time needed to boil the noodles adds precious time to our already chaotic day. So we had high hopes when we tried out the No-Boil Lasagna noodles. I love Noodles and Company. Every chance I get, I go there to eat. However, since I have moved, the closest one is 20 minutes away. My favorite dish is their Wisconsin Mac and Cheese. It is a fun dish where there is a cheesy sauce in the bottom of the bowl. Then, it is topped with macaroni noodles. To finish it off, it is topped with cheese. At your table you mix it all together to make a great mac and cheese. After a few iterations I have found a suitable substitute.

I wanted to make a fried Udon Dish, but I could not find Udon noodles for the life of me. I checked the stores close to me and the closest thing I could find was Chow Mein Noodles. I know they are not even close, but they worked great. If you can find Udon feel free to substitute it instead of the chow mein. No matter what noodle you use, this dish is fantastic.
The noodles were fried just long enough to give them some color from the pan. Fantastic!
