Chicken Bruschetta

Grilled chicken bruschetta was born from having too many tomatoes in our pantry and no bread in sight.  I was also looking for a low carb meal, so I decided to grill chicken cutlets and use them as the toasted bread in my bruschetta recipe.  The results were awesome!  The chicken was a perfect vessel … Read moreGrilled chicken bruschetta

Bacon Onion Jam

Bacon Onion Jam

Last year I appeared on the TV show American Grilled.  On that show I competed against Big Jim Stancil of Bareknuckles BBQ.  We kept in touch after the show and started to chat about all things bbq and grilling.  During one of those chats, he asked if I would like to go to the Jack Daniels BBQ Championship and help him out.  I could not say no.  Come on, it was the Jack!  While there I helped Big Jim do a little grilling for the teams up on the hill.  The dish that Big Jim made, was an elk burger topped with a bacon onion jam.  Ever since that day, I have been dreaming of that bacon onion jam.  It was slightly sweet, slightly salty and all around bacon-y.  It was delicious!  So this is my take on bacon onion jam.  Thanks for the idea Big Jim.

Mushroom Crostini

We have been looking for a quick and simple party appetizer. So Dana and I, immediately thought of bruschetta and/or crostini. What is the difference? Well it all has to do with the bread. Bruschetta comes from the Italian word Bruscare which means to “roast over coals”. Basically it is toasted slices of wide Italian bread. Not what we think of in America, but lets go with it. Crostini is the toasting of smaller bread slices, typically a baguette. This is what we think of as Bruschetta in America. Oops, I have been wrong all of my life. Well that stops here. Check out this Mushroom Crostini.

Homemade Stove Top Stuffing

Homemade Stove Top Stuffing

I love stove top stuffing.  There is something about the easy directions and great flavor that keeps me going back for more.  I love it! However, when you have a food blog, everyone wants you to make everything from scratch.  Who knew that it was a faux pas to serve boxed stuffing to your friends and family when you write about food. Well, you don’t need to tell me again.  I make my stuffing from scratch from now on.  Even though I base my flavors on boxed stuffing, haha.
