Chicago Deep Dish Pizza

I have been making pizzas quite a bit on the blog. My old roommate Mark asks me each time I post a pizza, when are you going to write about the Chicago style pizza you used to make back in college. Well Mark, this one is for you. Quite frankly I was scared to recreate … Read moreChicago Deep Dish Pizza

Time to Mussel Up!

Green Curry Mussels – Grill Style

I went to the store the other day and noticed that mussels were only $1.99 a pound.  I love mussels and I knew immediately that I was going to cooking them.  How to make them though.  So I recently went to Columbia Firehouse in Alexandria where I had green-curry mussels.  Then I went home and referenced my Weber’s Way to Grill cookbook and there was a perfect recipe for grilled coconut curry mussels.

Homemade Bagels

It is the start of another work week and I need something to power me through work.  The energy source of choice, the good ole Bagel.  I was looking for a good recipe and found it hard to come by.  Then I happened to StumbleUpon John D Lee’s homemade bagel recipe.  This recipe looked great and seemed pretty easy to do.

Stacked bagels are happy bagels

They don’t have a nice smooth texture on the outside, but that is due to my bad rolling technique and the fact that I had too much flour on my table.  Since the dough was not wet enough they developed cracks. 🙁

Dill Havarti Soup

In my home town there is a little restaurant that serves a great soup that I used to share with my Grandma Donna. She and I both loved it. It was a Dill Havarti Soup. It was light and refreshing even though it was cheese and cream based. The taste of the dill made the soup fresh and it always reminded me of summer. So today I wanted to recreate that beautiful soup.

I haven’t had the soup in a couple of years, but it was a smooth creamy soup. I wanted a little texture in mine so I didn’t blend it. I also added some potato.

Southwestern Hot Dogs

Over the weekend I had a hot dog and it reminded me of the hot dog stands in the Midwest. For some reason they are big in the Midwest but not out East. In the Midwest we had storefronts that just sold hot dogs. 20-30 different varieties of hot dogs. One of my favorite hot dogs was a southwestern hot dog. So delicious.

Spicy and awesome with a nice hit of refreshing sour cream.

I was discussing my favorite dog with my friends and they said it sounded gross. Who would want sour cream on a hot dog. With the spiciness of the peppers and salsa, the sour cream is a welcome addition.

Bacon Crusted Quiche

I love brunch and I love quiche. However, today I didn’t feel like making a pie crust, so I made a bacon crust for the quiche. Basically you form it like you would a real pie crust. You need to blind bake it with the help of some parchment and beans. Then you fill with your egg mixture and serve. Completely amazing.

Peanut Butter Cookies

The other night I was looking for something sweet to eat, but I didn’t have much in the pantry.  Most cookies needed brown sugar and I was out.  I also was lacking in chocolate and other sweet ingredients.  Then I found some peanut butter, but peanut butter cookies require brown sugar.  So I looked into making some homemade brown sugar.  Yes, it is easier to make than you would think. The key, 1/2 tbs molasses for every cup of sugar.

Recreating the bread bowl pasta

If you have been watching TV lately, Dominos has been advertising their new Bread Bowl Pasta.  It is Carbs on Carbs, so basically it is amazing.  So I wanted to make my own version to see how great pasta in a bread bowl could actually be.  Spoiler Alert – It was amazing.  The bread bowl soaked up the sauce and the cheesy topping was amazing.  I am not sure if I can ever eat pasta again in a regular bowl.

The best creation that I have made in the past year. Thanks Dominos.
