Chicken casserole dish with spinach, mushrooms and prosciutto.

  • 2 packages thin sliced chicken breasts
  • 8 slices prosciutto
  • 6 oz fresh spinach
  • 8 oz sliced mushrooms
  • 1/2 cup White Wine
  • 1/4 cup Olive oil
  • 1/4 onion diced
  • 3 tsp granulated chicken bouillon
  • 2 tsp corn starch
  • 1 tsp fresh rosemary minced
  • 1 tsp fresh parsley minced
  • 1 tsp fresh sage minced
  • 1 tsp fresh thyme minced
  • 3 cloves garlic minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 8 oz shredded mozzarella
  1. Preheat the oven to 375 degrees Fahrenheit.

  2. Grease a 13x9 pyrex dish.
  3. Evenly distribute the thinly sliced chicken into the 13x9 pan into two layers.
  4. Season with salt and pepper.
  5. Top with a single layer of proscuitto.
  6. Then top with a layer of spinach.
  7. Then top with a layer of mushrooms.
  8. In a medium bowl combine the olive oil, wine, dried chicken bouillon and corn starch. Mix well. Then add rosemary, parsley, sage, thyme, garlic, salt, pepper and diced onion to the dish. Mix thoroughly.
  9. Pour the mixture over the chicken.
  10. Cover with foil and then bake for 30-35 minutes.
  11. Remove the foil top with cheese and bake for another 5 minutes or until the chicken is 165 degrees.
