Green Curry with Chicken

I love green curry. It is so tasty, spicy and delicious. Basically it is the perfect food. I was going through the local MegaMart and they had green curry paste on the shelf. I knew I had to make some.  This is a quick and easy meal.  20 minutes start to finish.

Chicken, green beans and bamboo shoots make the perfect mixture of ingredients.

Green Curry with Chicken

  • 1 lb boneless skinless chicken
  • 1 can coconut milk
  • 1/4 cup chicken broth
  • 2 tbs green curry paste
  • 2 tbs fish sauce
  • 1 tbs brown sugar
  • 1 tsp cayenne pepper (optional)
  • 1 can bamboo shoots
  • 1 1/2 cups green beans

The first step is to thinly slice the chicken breasts.  You can cube the chicken but I like the way the curry comes out when the chicken is cut into strips.  Basically slice the chicken into 1/4 inch strips.

Next heat up a large skillet or wok on high.  Add the oil to the pan and then add the chicken.  Stir fry the chicken until it is no longer pink.  4-5 minutes.  Remove the chicken from the wok and place in a bowl.

Next turn the heat down to medium.  Add the coconut milk and the curry paste. Bring to a boil and simmer.

After you reduce the heat add the chicken broth, sugar, cayenne and fish sauce. Continue to simmer.

Next add the bamboo shoots, green beans and chicken to the pot.

Simmer for 5-10 minutes or until the green beans are tender.

If you like it spicier you can add more cayenne pepper.  If you don’t like it spicy you don’t have to add any.  Basically you can make one pot and then give each person at the table the responsibility for adjusting the spiciness.
