A simple and quick recipe that brings back the flavors that everyone remembers. A play on pork chops and applesauce.

Ingredients
Apple Roasted Pork Tenderloin
  • 1-2 lb pork tenderloin
  • 3 granny smith apples
  • 1 portion pork rub see recipe below
  • 3-4 tbs olive oil
  • 1/4 cup apple juice
Pork Rub
  • 1 tsp sea salt
  • 1/2 tsp oregano dried
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1/4 tsp thyme
Instructions
  1. Preheat your oven to 450 degrees Fahrenheit.
  2. Core and slice 3 Granny Smith Apples into thick slices. I peeled them as my son hates peel, but keeping the peel on keeps the apple shape.
  3. In a small bowl combine the rub ingredients.
  4. Trim the pork tenderloin, removing any fat or silver skin that you see.
  5. Rub the pork tenderloin with a little olive oil (~1Tbs) and then sprinkle with the rub.
  6. Heat 1-2 Tbs of Olive Oil in a oven safe skillet over medium/high heat. Once the olive oil starts to shimmer, add the seasoned pork tenderloin.
  7. Brown the pork tenderloin on all sides, turn as needed. This will take about 7-9 minutes.
  8. Once the pork tenderloin is evenly browned, remove it from the heat and add the apples and 1/4 cup of apple juice.
  9. Place the pan in the oven and cook until the internal temperature of the pork tenderloin reaches 150 degrees in the thickest part. Depending on the size of the tenderloin, this will take between 10-18 minutes.
  10. Remove from the oven and allow the pork tenderloin to rest for 5 minutes.
  11. Slice and serve with the Apples on the side.
