In a large bowl scoop out the avocado pulp. Then stir in the dried spices (salt, cumin and cayenne) and then mash it all together with a potato masher.
Juice a lime and pour it over mashed avocado. Fold it in. This will prevent the avocado from turning brown. Drain the excess lime juice from the avocado and reserve it.
Dice up the onion, tomatoes and seeded jalapeno. Add it to the avocado mixture. Then mince garlic and the cilantro and add it to the mixture. Stir.
Then add 1 tbs of the lime juice to the guacamole and stir.
Let the guacamole sit at room temperature for an hour to let the flavors meld. Serve with your favorite tortilla chips or alongside your favorite Tex-Mex.
