Ingredients
  • 4 buttermilk biscuits
  • 3 bell peppers mixed colors
  • 1 yellow onion
  • 1 lb breakfast sausage
  • 3 cups cubed potatoes
  • 3 eggs
  • 6 oz cheddar cheese
Instructions
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Dice up 3 peppers and an onion.
  3. In a large pan add 2 tbs of oil and saute the peppers and onions. Season with salt and pepper to taste.
  4. In a separate medium frying pan over medium/high heat, cook 1 pound of your favorite breakfast sausage according to the package instructions. Once cooked remove the sausage and reserve the grease.
  5. Mix the eggs with 2 tbs of milk. Whip up the eggs till light yellow in color. Turn the heat on the medium frying pan to medium heat. Then pour into the medium frying pan with the sausage grease. Cook for 2-3 minutes or until the eggs are fully cooked. Set aside.
  6. Once the peppers and onions soften, 4-5 minutes add the potatoes. You can use fresh, frozen or canned diced potatoes. The frozen potatoes will take an extra 5-8 minutes.
  7. Cook until the potatoes start to brown. 10-20 minutes depending on the type of potato that you use.
  8. Once the potatoes are cooked, add the sausage to the potato mixture. Stir.
  9. In separate oven safe serving plates add 1/4 cup of the sausage potato mixture.
  10. Top with a biscuit.
  11. Then top the biscuit with another 1/2 to 1 cup of the sausage potato mixture.
  12. Top with the scrambled eggs and cheese.
  13. Place the serving plates in the oven and cook for 5-8 minutes or until the cheese is melted.
  14. Serve immediately.
