A perfect snowy day treat!
In a blender add 2/3 cup of ice, 3 ounces cream of coconut and 2 ounces Malibu Rum. Blend until smooth. This won't be super creamy as I wanted a icee type of consistency. If you will to have a truely frozen drink add another 1/3 cup of ice.
While the blender is running, coat the edge of a martini glass with some cream of coconut. Then cover the edge with sweetened coconut. I like to place 1/2 cup of sweetened coconut on a plate and then roll the coated edge of the martini glass into the coconut.
Pour into the prepared martini glass and top with a sprinkle of sweetened coconut.
