Deep Fried Bacon - need I say more?
Course: Deep Fried Awesomeness
Cuisine: Southern
Servings: 6
Author: Rex
  • 1 lb thick sliced bacon
  • 1/2 cup plus 3tbs flour
  • 3/4 cup cream
  • 2 eggs
  • 4 tbs butter
  • 20-30 saltines
  • salt and pepper
  • hot sauce
  • 1 cup chicken broth
  • 1 tbs worcestershire sauce
Frying the Bacon
  1. I tried to make these with raw bacon and with partially cooked bacon. I found that partially cooked bacon worked the best. Since I wanted the bacon perfectly flat I used the microwave to partially cook the bacon. Place 4-6 strips of bacon on a paper towel lined plate. Then top with a nother piece of paper towel. Place in the microwave and cook on high for 3 minutes, remove and let cool.
  2. Next dredge the cooled bacon in seasoned flour.
  3. Then dredge it in an egg wash. To make the egg wash, mix two eggs with a 1/4 cup cream and a couple dashes of hot sauce.
  4. Now dredge the egg covered bacon in crushed saltine crackers.
  5. Place into a medium/high heat heavy bottom pan that is coated with vegetable oil.
  6. Fry for about 2-4 minutes on each side. Cook until the bacon is golden brown on each side. Remove from the pan and let drain on a paper towel.
Making the Gravy
  1. To make the gravy melt 4tbs of butter in a pan and whisk in 3tbs of flour. Cook until the flour turns slighly brown.
  2. Then add 1cup of chicken broth, 1/2 cup of cream, 1 tbs of worcestershire, a dash of hot sauce and salt and pepper.
  3. Heat until boiling and then reduce. Stirring frequently. Once it starts to thicken, remove from the heat and let sit for a couple of minutes.
  4. Serve the chicken fried bacon with the gravy for a heart stopping meal that is amazing.
